It has been a very blustery winter so far. As I walked home from work on Friday, the wind was so strong it kept blowing off my jacket hood. The hood has snaps on it and a scarf to help keep it down but it was all to no avail. This is the sort of weather that makes me want to cook -- so out comes the crock pot and veggies.
The recipe assured me the soup would be more flavorful if I sauteed the vegetables first. All right then, in they all go into the pan along with some minced garlic. Yum. I love how my apartment smells when something is quietly bubbling in the crock pot.
Here is the finished product--crock pot veggie soup. It is quite yummy and perfect for these cold, blustery winter days.
I couldn't resist picking a few roses up from the farmer's market whilst I purchased the veggies. Did I need them? No, but oh, it's so lovely to see the soft colors and breathe in their quiet scent......
The kitty brats have been keeping busy as well. Winston likes to "help" with the laundry. His efforts are always appreciated. *ahem*
Lucy enjoys escaping into the hallway. Here she poses in a relaxed, yet regal, feline supine pose. Then I had to scoop her up before the big, chocolate lab down the hall decided to come gallumping out!
Finally, Oscar kitty perfoming his cuddle kitty duties. He makes it easy to put down the phone and snap a few photos-thankfully, the caller was a kitty lover and completely understood my need to capture the moment :)

We're glad everyone seems to be doing well, endless, brutal, miserable winter notwithstanding. "Blustery" is an understatement, IMO!

DeleteHere is the link to the recipe I used. I had to make a few substituions. I didn't have olive oil and used butter. I didn't have egg noodles and used cooked rice and no turnip and added an extra carrot :)
...oh, and it looks like I missed the cabbage, too. *sigh*

ReplyDeletekeep warm! We are in sub zero temps here in Michigan. I LOVE to make tomato veggie soup in the winter but I make it fattening by adding meatballs :) Soup and cuddling with kitties, nothing better!
